Since I've not gotten the official word as to whether or not GFC (google friend connect) is shutting down alongside google reader come July 1 (can anyone help me out with that?), I thought I'd invite you all to follow me and my nonsense through Bloglovin'- just in case. Easy Potato Medley

It can certainly be said that I love to make any sort of meal that is extremely flexible with its ingredients (stir fry, soup, salad, etc.) since I'm terrible at keeping an inventory of what's in my cabinets. So if you have two kinds of potatoes that are about to go bad, and a refrigerator full of odds & ends (of the vegetable variety), this dish is for you.

We used:
-two sweet potatoes
-one large red potato
-hominy
-onion
-mushrooms
-carrots
-cilantro
-oregano
-olive oil
-salt + pepper
-a splash of light soy sauce (I told you, we kind of threw everything in)
-honey

We wish we would've added:
-garlic

Chop potatoes and slice carrots, as you'll want to put those in the pot first (over medium heat, with some oil), so they have plenty of time to become tender. Add the hominy (use liquid as a broth). While all that's cooking, chop the rest of your veggies and add to pot. Add spices/condiments and feel free to experiment. Seriously- if you think it sounds good, it probably will be. Add cilantro and mushrooms last, as you don't want those to be too tender. Cook until desired tenderness is achieved.

Today was one of those days where, shortly after dressing myself, I wondered why on earth I hadn't thought of putting this top and skirt together before. They complement each other so well! Not to mention, the whole thing made me feel extremely lady-like; which does not happen very often. It's a fake-it-til-you-make-it sort of situation.

There is an ongoing debate around here about the animal pin you see at my collar; Matt says it's a lamb, and I think it's a deer (feel free to weigh in). Either way, it's an adorable souvenir he brought back from a weekend venture to Istanbul during his stay in Greece. I'm thinking about finding a thin chain to attach and make it a necklace, but for today it works as is.

Hey guys! How are you? I know I've been very absent the last several days, but I've been feeling pretty blue due to the absence of my boo. I haven't felt like doing much of anything except consuming lethal amounts of sugar and watching terrible movies/shows. But I think I may be crawling out of the pit, slowly but surely. Mixing some fun patterns together sure helps : )

This pair of sunglasses might be my favorite possession. By might, I mean definitely are. They're vintage Ray Ban-esuqe that Matt gave me as a gift! They needed a screw replaced, as they kept sliding all the way down my nose whenever I looked down, but now they are perfect. Well, they still have a crack under one of the lenses, but I don't count that. 

Also: unfortunately, we're back to poor picture quality for the time being. Matt took my baby to Greece, but that means I'll have hopefully stunning photos to share upon his return!

How's your week going thus far? I'm already ready for the weekend because my BFF is coming for a visit! I can't wait!
