An Attempt to Not Suck: Domesticity

Admittedly, I'm not a superstar in the kitchen. I've gotten slightly better due to the somewhat substantial change in my diet over the past two years that requires more nutritional enterprise (more on that later), but I'm still not a magician. My lack of food wizardry also stems from the fact that I live with someone who a) loves to cook and b) happens to be amazing at it, so, it was only destiny that I became lazy.
However, I do have some spare time on occasion, and will periodically use that spare time to try and convince myself that I'm not a completely lost cause in the domesticity department. Hence, these breakfast muffins:

I don't really feel comfortable calling myself a vegan, as I do "cheat" from time to time, and don't always use animal-free products (looking at you, mascara) but I am a vegetarian with vegan tendencies. I'm also a person who needs a hearty breakfast; none of this piece-of-fruit-and-I'm-set business for me. So, in looking up a good vegan breakfast recipe, I found these apple muffins to be a sufficient option.

I was definitely concerned with the fate of these babies, as I improvised several ingredients and amounts. I didn't want to pay $7 for what appeared to be a 10 lb. bag of pastry flour, so I used more of the whole wheat flour with some flax meal. Not to mention, I'd forgotten how much flour I'd already put in at one point, so all bets were off. I used olive oil instead of corn oil, the chunks of apple were way too big, and I had to chop my ginger instead of grating it because, well, I am grater-less. I also did what one of the commenters suggested: decreasing the amount of flour and adding some baking soda and baking powder to give the muffins some rise.

Despite my cluelessness and pure guesswork carefully calculated alterations, they turned out pretty edible! The reviewers on the recipe website were right- they are super dense, which is exactly what I wanted. They also made my apartment smell amazing!

What? Flowers don't grow out of your baked goods? Amateurs. 

I would definitely recommend these as a grab-and-shove-in-the-general-vicinity-of-my-mouth-as-I-literally-run-to-school breakfast option. Or as an I-like-food option : ). And don't forget to let me know if you try them!
